There is no elaborate story to go along with this post. In fact there is no story at all. And there’s only one picture, taken a millisecond before the kids rushed to the table to eat. It’s a simple post because it’s a simple recipe, the kind of dish I make when I need to act fast and put dinner on the table.

Pasta is a gift. Bless the Italians and their pasta-making contribution to the world. Pasta is a comfort food on so many levels. One, it tastes good. Two, from what I gather most children enjoy pasta which means that parents get to eat in peace, and peace at the dinner table is the ultimate comfort.

Three Winning Lactose-Free Recipes

Earlier this fall we teamed up with Circle of Moms to run the Lactose-Free Recipe Contest. We asked this community of mothers for their best dishes featuring lactose-free milk and Haylee Moore rose to the challenge. Her three recipes, Cheesy Jalapeño Cornbread, French Toast and Turkey Meatloaf garnered the most votes from the community and she took home all three prizes!

Sunday Dinner

Sunday dinner, or “supper” as we called it, was always a special time for my family, the one meal that we made sure to sit down and eat together. My mother would make pot roast or fried chicken or one of our other family favorites and all the kids would argue over who got the last helping of mashed potatoes or the last piece of chicken.

Thanksgiving is all about family and friends, giving thanks, and a whole lotta comfort food. This year instead of serving up the same ol’ boring leftovers, take these lactose-free suggestions for a spin!

The Sandwich. Use either your leftover dinner rolls or good artisan bread. Spread cranberry sauce as if it was mayo, then layer with turkey, stuffing, potatoes—whatever sounds good to you. But don’t stop there—spread the outside of the bread with some butter, sprinkle with aged parmesan cheese, then grill it until golden brown and the cheese has formed a crispy crust. It’s to die for.

A while back, when I was visiting an aunt and uncle I don’t see very often, my uncle told me that he’d been struggling with constipation. My aunt cringed—Bill!—mortified by the turn in our conversation. I laughed.

As a registered dietitian, I don’t squirm when people divulge their digestive secrets. My professional experience has long since numbed me to impolite topics, even when discussed in polite company. Perhaps my perception shift started when I had a summer job working as a nurse’s aide. At age 19, I learned to nonchalantly ask patients about their bowel movements, as if that were normal conversation.

So when my daughter’s 25-year-old coach pulled me aside and whispered that she had to give up dairy because of lactose intolerance, I understood her embarrassment. Face it: the symptoms of lactose intolerance—gas, bloating and diarrhea—aren’t exactly socially acceptable topics of discussion.

A Spicy Start to Fall

Happy fall! I hope everyone is enjoying these first cool days of sweatshirt weather. I’ve been busy in the kitchen since my last post, creating some delicious lactose-free recipes for you.

I made one of my favorite soups last week at the very first sign of fall. I love making soups when the weather turns colder; they’re easy but deliver big flavor and often all you need is a loaf of crusty bread to complete the meal. This is one of those recipes that I immediately start craving the moment there’s a chill in the air. It’s healthy, plus it’s something that everyone in the family loves, so I can make it over and over throughout fall and winter with no complaints. It’s got great flavor with just the right amount of spice!
